  • 2 grapefruits

  • Brown sugar

  • 10 cl of raspberry coulis

  • 1 tablespoon of honey

  • 10 cl of grapefruit juice


  • 50 cl whole milk

  • 25 cl liquid cream

  • 250 g of honey

  • 6 egg yolks

 Grapefruit Caramelized  honey ice cream

  • for the ice cream: 

  • mix the yolks and honey. Heat the milk with a pinch of fleur de sel. Once hot, add the yolks. Heat the appliance to 84°, like a custard, stirring regularly

  • pass the cream through a sieve then churn it once cold in the ice cream maker

  • Peel and cut the grapefruit segments, drain well then sprinkle with brown sugar. Caramelize the quarters using a blowtorch

  • Arrange the grapefruit quarters on a rosette plate, pour the coulis in the middle then add a quenelle of honey ice cream
