Cod brandade

For 4 people

  • 500 g of salted cod

  • 4 good cloves of garlic

  • salt and pepper

  • 20 g of breadcrumbs

  • 300 g potato

  • 20 cl of olive oil

  • 8 tablespoons of cream

  • desalinate the cod the day before (in a large container, changing the water 5 times approximately every 3 heures)

  • The next day, boil the cream and the garlic cloves previously removed from their germs

  • Once the cream boils, add the cod and continue cooking for 20 minutes over low heat.

  • Drain the cod and reserve  the garlic cloves for later

  • Cook the potatoes in boiling water for 25 minutes

  • Strip the cod, add the garlic cloves, the cream, the olive oil and the cooked potatoes, then mix coarsely all, adjust the seasoning if necessary

  • Place the preparation   in a gratin dish and sprinkle with breadcrumbs

  • Put in the oven for 10 min thermostat 175°C,  then finish coloring 3 min in grill position
