Cod brandade

500 g of salted cod

4 good cloves of garlic

salt and pepper

20 g of breadcrumbs

300 g potato
-
20 cl of olive oil

8 tablespoons of cream

desalinate the cod the day before (in a large container, changing the water 5 times approximately every 3 heures)

The next day, boil the cream and the garlic cloves previously removed from their germs
-
Once the cream boils, add the cod and continue cooking for 20 minutes over low heat.

Drain the cod and reserve the garlic cloves for later

Cook the potatoes in boiling water for 25 minutes

Strip the cod, add the garlic cloves, the cream, the olive oil and the cooked potatoes, then mix coarsely all, adjust the seasoning if necessary

Place the preparation in a gratin dish and sprinkle with breadcrumbs

Put in the oven for 10 min thermostat 175°C, then finish coloring 3 min in grill position
