900 g of tuna steak

capers and pickles

salt pepper

2 cl cognac

Pulco

olive oil

tabascco

60g chopped chives
-
2 shallots

Cut the tuna into 1cm dice.

Add the shallots chopped, chopped capers, minced pickles and chopped chives.

Season with salt, pepper, tabasco, cognac, olive oil and pulco according to your taste.

Keep cool until service.

Arrange in a circle on a cold plate decorated with young shoots of shiso.
