Tartar

of tuna

Preparation: 20 min

Difficulty : *

For 8 people

  • 900 g of tuna steak

  • capers and pickles

  • salt pepper

  • 2 cl cognac

  • Pulco

  • olive oil

  • tabascco

  • 60g chopped chives

  • 2 shallots

  • Cut the tuna into 1cm dice.

  • Add the shallots  chopped, chopped capers,   minced pickles and chopped chives.

  • Season with salt, pepper, tabasco, cognac, olive oil and pulco  according to your taste.

  • Keep cool until service.

  • Arrange in a circle on a cold plate decorated with young shoots of shiso.
