with raspberries

For 4 people

  • 500g of raspberries

  • 1/2 lemon

  • 4 egg yolks

  • 8 pink biscuits from Reims

  • 100g caster sugar

  • 40g icing sugar

  • 15cl of dry or sweet white wine (champagne, Sauternes, etc.)

  • Blend the raspberries (except a few for decoration) with the lemon juice and icing sugar. Book

  • Place the egg yolks in a small bowl and pour in the sugar, whisking until the mixture whitens. Add the white wine then place the bowl on a saucepan filled with boiling water and kept over very low heat. Beat with a whisk until the preparation triples in volume.

  • Remove the bowl from the bain-marie and pour the sabayon into cups. Let it cool for 15 minutes. Cover with raspberry coulis, decorate with reserved raspberries and serve with pink biscuits.

Raspberry is one of the lowest calorie fruits. Its potassium and vitamin C content is remarkable.
